My son, the chocoholic, is on the couch recovering from his latest surgery. In addition to making sure he is taking his pain medication and that the other kids are letting him rest, I made him one of his favorite treats, Éclairs! Instead of filling them with custard these are filled with chocolate cream! YUM!

Pastry Ingredients:

1C Water

1/8 tsp Salt

½ C Butter

1C Flour

4 Eggs


  • Bring to a boil the water, salt and butter.
  • Add the flour and stir until a ball forms. This happens very quickly.
  • Remove from the heat and allow to cool for 10 minutes.
  • Stir the eggs in one at a time until they are fully incorporated.
  • pipe onto a lined cookie sheet.
  • Bake at 400 until golden brown and puffy.

Chocolate Cream filling Ingredients:

Heavy Whipping Cream

Powdered Sugar

Cocoa Powder


  • Add all ingredients and whip until firm peaks form.
  • pipe into pastry shells.

Chocolate glaze Ingredients:

½C Semi Sweet Chocolate chips

2 Tbls Butter

1C Powdered Sugar

2 Tbls Boiling Water


  • Melt the butter and chocolate together over low heat.
  • Add the boiling water and sugar.
  • Stir until smooth.
  • Dip or drizzle over éclairs.

I am sure those eclairs are helping him recover! I feel better just looking at them and pining for them and considering getting out of bet and trying to make them.

I hope your son is feeling better, what a nice mom you are to make these eclairs for him. True story, yeesterday my 8 yr old granddaughter asked me if I could make her eclairs, if I knew how, I told her next time she came over we would make them together. Thank you for your recipe, I just saved it in my favorites, they look fantastic and the chocolate cream she will love!

On another theme, you asked me a while back where to get chestnut flour from. I didn't know at the time, but have since found out that Shipton Mill do it - along with all sorts of other unusual flours.

What a wonderful treat!!! I loved eclairs growing-up, just loved them. I never had a homemade one, how wonderful is that!!!!

I hope your little one is doing better and that he is up and running around. He is so adorable in his jammies.

Oh my, you have made the eclairs the French way with chocolate cream, at least that's what my friend Celine says! She says we Americans make them all wrong! hehe.. I have that plate.. but I wish I had those eclairs!~ Hope your boy will be better molto presto!
